Ingredients
- 24 oz fresh lemon juice (about 12 lemons, or bottled if fresh unavailable)
- 16 oz water
- 12 oz simple syrup (1:1 sugar-to-water, pre-made and chilled)
- 2 oz fresh jalapeño juice (strain from 4-5 muddled jalapeños, seeds removed for medium heat)
- 4 oz fresh lime juice (about 2 limes)
- 6 oz ginger ale (decarbonated — let sit open 15 minutes, then stir vigorously)
Method
- Muddle 4-5 fresh jalapeños (seeds removed) in a blender with 1/4 cup water, strain through fine mesh into a bowl — reserve 2 oz of the jalapeño juice.
- In a large pitcher, combine lemon juice, lime juice, jalapeño juice, simple syrup, water, and decarbonated ginger ale. Stir well and chill in the refrigerator for at least 30 minutes.
- Pour the chilled mixture into the Ninja Slushi pitcher up to the 64 oz max fill line.
- Set machine to Slush mode and press start. The slush will be ready in approximately 35–45 minutes — listen for the motor pitch to change and the mixture to thicken visibly.
- Dispense into glasses rimmed with Tajín seasoning, garnish with a fresh lime wheel and a thin jalapeño slice, and serve immediately.
