Ingredients
- 3/4 cup very cold rosé champagne
- 3/4 cup lychee juice or syrup from canned lychees
- 1/2 cup white peach nectar or pear juice
- 1/4 cup white grape juice
- 2 tbsp fresh lime juice
- 1 tbsp elderflower syrup or 1/2 oz elderflower liqueur
- 1 to 2 tbsp agave nectar or simple syrup (if needed)
- 3 to 4 whole lychees
- pinch of sea salt
Method
- Blend the whole lychees with the lychee juice until smooth, then strain for a cleaner finish if desired
- In a chilled pitcher, combine the lychee mixture, peach or pear juice, white grape juice, lime juice, elderflower syrup, agave, and sea salt and stir well
- Add the rosé champagne last and stir gently so it keeps structure without foaming too much
- Taste and adjust agave, lime, or lychee juice to preference
- Let the mixture settle briefly, then pour into the Ninja Slushi vessel and process until icy and smooth
- Garnish with a lychee on a pick, a thin lime wheel, edible rose petals, or a light rose sugar rim
